1 sugar pumpkin
3 Apples, peeled & cored
(use Macintosh, Gala, Braeburn or Granny Smith)
water
cinnamon, nutmeg
(optional - sprinkle into the cooking water or when you puree/mash)
1. Halve the pumpkin, peel and de-seed it.
2. Slice the apples
3. Set oven to 375. Place sliced pumpkin in dish surrounded by 2 inches of water
sliced side up- add the cut up apple. Cook for 45 mins.
4. Let cool, scrape pumpkin guts out, and puree along with apples.
But apparently, Trader Joe's has organic pumpkin in a can...for $1
Not too shabby Trader Joe's.
It's not even October yet and all I want is pumpkin!

ReplyDeleteBaking the pumpkin isn't so bad. It's pretty quick and painless to make it. Plus, with the baked apples, it's pretty unreal how delic it is.
